Five fresh jujube (Ziziphus jujuba Mill.) varieties were used to study the changes physiological biochemical characteristics related to fruit softening after harvest.The results showed that the respiratory intensity of five jujube varieties changed within a narrow range at 0℃. Five varieties didn't have an obvious respiratory peak. The ethylene production was significantly different among the studied varieties. The ethylene production of Dali Yuanzao, Xiangfen Yuanzao and Popozao was significantly higher than that of Jinsi Xiaozao and Dabaizao.The ethylene production of jujube fruits was not correlated with their storage life and softening.The experiment also showed that PPO, PG and ascorbic acid oxidase activities of jujube increased with their senescence and softening, but V C content decreased.Xiangfen Yuanzao had the longest storage life and the highest value of V C (83.3%, 0℃) at storage among the five varieties. There was a significant negative correlation between the V C content and ascorbic acid oxidase activity in fruits (r= -0 791 ).
